Brisket Marinade Recipes

All marinades contain an acidic ingredient, be it wine, vinegar, fruit juice or beer, and most include oil of some kind. For the ones with oil, they work best when the liquid ingredients are whisked vigorously, turning the concoction into an emulsion, similar to a salad dressing. Otherwise, the oil only floats on top, with the more flavorful liquids below.

Briskets can be marinated in a covered baking dish or roasting pan in the refrigerator. Trim the fat cap down to about 1/4 inch thick, then score through the fat in a criss cross pattern to expose the meat underneath. Turn the brisket over several times as it marinates so each side gets an equal share of flavor.

Top Brisket Marinade Recipes Easy Winey Brisket Marinade

This recipe can be used for any brisket, whether it's barbecued on the grill, cooked in the smoker or baked in the oven.

INGREDIENTS

  • One cup of a drinkable Merlot wine
  • One-quarter cup of lite soy sauce
  • One tablespoon Worcestershire sauce
  • One teaspoon ground black pepper
  • One-half teaspoon celery salt
  • One bunch of green onions, sliced thinly
  • One teaspoon chopped garlic
Combine the ingredients, then marinate the brisket at least four hours, preferably overnight. Rich Brown Brisket Marinade

The rich, complex flavors of balsamic vinegar and Worcestershire sauce provide deep flavor to your briskets.

INGREDIENTS

  • One-half cup red wine vinegar
  • One-quarter cup balsamic vinegar
  • One-quarter cup Worcestershire sauce
  • Two tablespoons brown sugar
  • One tablespoon minced garlic
  • One teaspoon cracked peppercorns
  • One teaspoon salt
Mix together well to ensure that the brown sugar and salt are completely dissolved. Best when marinated overnight, so the flavors have plenty of time to soak in deeply. "The Cheater" Brisket Marinade Recipe

This recipe gets it's name because it uses liquid smoke to mimic the smoky flavor of burning smoke wood chips and chunks. Even though it's cheating, it's still good!

INGREDIENTS

  • One-half cup cider vinegar
  • One-half cup apple juice
  • One-quarter cup light vegetable oil
  • Two tablespoons Wright's Liquid Smoke
  • One tablespoon onion powder
  • Two teaspoons salt
  • One teaspoon black pepper
Combine everything except the oil, mixing until the salt is dissolved. Then gradually pour in the oil while wisking it in. With an overnight marinade, the smoke flavor will penetrate nicely.

Bake this brisket uncovered in the oven at 275 degrees for 45 minutes per pound, or until nice and tender.

Of the three brisket marinade recipes I'd have to say the Rich Brown marinade is my favorite. I love the mingled flavors of the balsamic vinegar and Worcestershire sauce.
