This flour is the closest thing in taste and usability to normal wheat flour that i have found. My wife has been gluten free for about three years and we've been trying everything we can get our hands on. This is the first to beat out Kings GF flour in my opinion. My wife also has an allergy to corn, so this was a perfect choice, as corn starch is used in most GF flours for the texture it helps create.

Watch out when trying to make something fluffy like pancakes or cookies, you'll want to use a little less flour, or a little more liquids as this tends to turn into what feels like bread dough pretty quickly.

Also, don't over-mix the dough, unless you are kneading it to make bread or something with that 'tougher' feel to it. It makes a very dense dough pretty quickly.

I've already gone through 2-1/2 bags this month, but it is the holidays and my kids are finally old enough to make gingerbread cookies!
